A Las Vegas day trip from Phoenix might be streching it. However you can take a bus trip to the Grand Canyon. The whole trip is a guided tour and takes a whole day. You see a few nice parts of the Grand Canyon before you head back to Phoenix.
If you drive to the Grand Canyon yourself, it takes about 4 hours to get there. You can take Hwy 64 from Flagstaff all the way through the South Rim of the canyon. You end up at Route 89 which would take you back to Flagstaff and back to Phoenix. You would have to get an early start for this trip.
A good day trip would be to take the Apache Trail to the Roosevelt Dam. The Apache Trail is just east of Phoenix and it is a very scenic drive through the Superstitious Mountains. After a while the Apache Trail becomes a dirt road that goes through a scenic drive through the mountains and valleys. Once you get to the Roosevelt Dam, you come to a main road that takes you near Globe and Miami, about 60 miles from Phoenix. Route 60 will take you back to Phoenix.
Another day trip is to drive up I-17 to Sedona. This is a beautiful part of Arizona. They call it Red Rock Country because all the rock formations are red. Sedona is close to some Ancient Indian dwellings such as Tuzigoot, Montezuma's Castle and Montezuma Well. You can hike up the red hills, but you need a permit to do so. Or you can drive up the red hills on Schenbly Hill Road up the mountain for some breathtaking views of Sedona, and areas west to the next mountain range. The road becomes a dirt road. This road would take you to I-17 and back to Phoenix.
There are all kinds of shops and boutiques in Sedona if you like shopping.
Scottsdale is a very nice suburb of Phoenix. This city is very popular with the resort hotels. There is lots of shopping in Scottsdale. It is just a very nice town to drive around in.
These are just a few of the things that you can do in Arizona. Oh yeah, there is some good golfing, so I'm told. I'm not a golfer myself.

Does anyone know what there is near Phoenix to "sight-see"??
We've figured that Vegas and the Grand Canyon are too far away for a day trip...we have accomodations in Phoenix already paid plus we've been to Vegas and the GC, just loved them.
Any suggestions?? Thanks. ;D

Thanks trainjunkie47 .. So most of the restaurants are super expensive...glad we have a kitchen for breakfast and lunch! Will remember to buy lots of water and keep some in the car... we don't mind having a decent hamburger, just not big on too much from the chains!
Not happy about the rattlesnakes...or scorpions. Thanks again! ;D

Where to eat: For a fast food burger, the best drive thru burger in North America is Carl's Jr. Beef not your thing? Try El Pollo Loco. Looking for sit down that will not break the bank? Try Marie Callanders.
Not sure what is in Phoenix to see as I have only been there on business, with no time to sight see. You're correct about the golf, cannot swing a dead cat without hitting the entrance to a golf course in Phoenix.
Vegas is just shy of 300 miles or 500 k. It will take a full 6 hours or more one way to amke the trip, regardless of when you go.
The Grand Canyon by way of Flagstaff is 220 miles or 370 k. It is all freeway up I-17 to Flagstaff, 3/4's the way.
When you pick up your car at the airport, go to the mini mart and get 2 or 3 liters of water for each of you. If your car breaks down outside the big city, your life just may depend on it. Also, Arizona has its fair share of rattlesnakes, but they are not looking for a fight. If you wander apon one, just slowly back off or stay still and give it the chance to move on.
