I usually simmer my corned beef as well and actually it works the same in the oven. Add about an inch of water and cover (I used foil) It developed about another inch of liquid on it's own. l started it at 250 degrees for a couple of hours, 1 til 3 pm, then to 350 til 6 pm and it was delicious. Perfect with all the fat which is easy to fork off as you eat. Love this point cut.
